Sometime soon, we will be getting a tree...Just don't know when! With that and the stockings, it will really start to feel like Christmas-time. =) Shopping lists are getting crossed off---someone is going to get a fun present! Dad and the girls made Toffee last night. Didn't come out quite perfect enough, you know. We'll just have to try it again. =P But this batch still definitely tastes extremely yummy; it's my favorite home-made candy, by a large margin. Peppermint Bark is pretty good, too. It would be my #2 candy--thing. In case you would like to boil up your own toffee, try this recipe:
English Toffee
1 1/3 c. butter
1 c. sugar
2/3 c. water
3/4 tsp. salt
Combine first 4 ingredients in sauce-pan and cook over low heat, stirring constantly to boiling. Continue cooking to 236' without stirring. Add:
1 1/2 c. almonds, chopped
Continue cooking to 290', stirring constantly. Remove from heat and stir in:
1/2 tsp. baking soda
Pour immediately onto greased cookie sheet. Place:
1 c. chocolate chips (or however many looks right)
on top, spreading until melted; sprinkle with finely chopped nuts (almonds). Cool; break or cut into pieces.
*Note: check your candy thermometer before you start; boiling water is 212'F.*
